Vegetable and Avocado Burritos

Ingredients:

  • For the Burrito Filling:

    • 1 tablespoon olive oil
    • 1 bell pepper (red or green), diced
    • 1 zucchini, diced
    • 1 cup corn (fresh, frozen, or canned)
    • 1 can (15 oz) black beans, rinsed and drained
    • 1 teaspoon cumin
    • 1 teaspoon chili powder
    • Salt and pepper to taste
    • 1 avocado, diced
    • 1 cup fresh spinach or kale, chopped
    • Juice of 1 lime
    • Fresh cilantro, chopped (optional)
  • For the Burritos:

    • 4 large whole wheat tortillas
    • Salsa or pico de gallo for serving (optional)
    • Greek yogurt or sour cream for serving (optional)

Instructions:

  1. Cook the Vegetables:

    • In a large skillet, heat the olive oil over medium heat.
    • Add the diced bell pepper and zucchini, cooking for about 5-7 minutes until they start to soften.
    • Stir in the corn, black beans, cumin, chili powder, salt, and pepper. Cook for another 3-4 minutes until everything is heated through. Remove from heat.
  2. Prepare the Filling:

    • In a mixing bowl, combine the cooked vegetable mixture with the diced avocado, chopped spinach or kale, lime juice, and cilantro (if using). Gently mix to combine.
  3. Assemble the Burritos:

    • Lay a tortilla flat on a clean surface. Spoon a generous amount of the vegetable filling onto the center of the tortilla.
    • Fold in the sides and roll it up tightly from the bottom to the top. Repeat with the remaining tortillas.
  4. Serve:

    • You can serve the burritos as is, or you can grill them on a skillet or panini press for a crispy exterior. Cut in half and serve with salsa or Greek yogurt/sour cream on the side.

Tips:

  • You can customize the filling by adding other vegetables like mushrooms, spinach, or shredded carrots.
  • For added protein, consider including grilled chicken, tofu, or a sprinkle of cheese.
  • These burritos can be made ahead of time and stored in the fridge for a quick grab-and-go snack!

These vegetable and avocado burritos are not only healthy but also filling and delicious. Enjoy!
